Bar Manager I Up to 90K+ Super

An exciting opportunity has opened for an experienced Bar Manager to take ownership of the beverage operation within a premium Sydney restaurant and bar.

This is a hands-on leadership role combining strong beverage knowledge, creativity, people leadership and commercial operations. You’ll be right in the middle of service with your team while taking ownership of the broader beverage offering, cocktail program, stock, GP%, ordering, suppliers and overall performance of the bar.

We’re looking for someone who understands what makes a great bar operation - from developing an exciting cocktail offering and building a knowledgeable team through to delivering exceptional service and keeping a close eye on the numbers behind the scenes.

About the Role
As Bar Manager, you’ll take ownership of the day-to-day bar operation and play a key role in shaping the venue’s overall beverage experience. You’ll lead from the front throughout busy services, working alongside your team and setting the standard for quality, consistency and premium hospitality.
Cocktails are an important part of the offering, so you’ll bring strong technical knowledge and creativity to the program — contributing fresh ideas, experimenting with flavours and ingredients, and ensuring drinks are executed consistently to a high standard. Beyond cocktails, you’ll oversee the broader beverage offering across wine and spirits while balancing creativity with strong commercial performance.

You’ll be responsible for:

• Leading, training and developing a passionate and knowledgeable bar team.
• Remaining hands-on behind the bar and leading from the front throughout service.
• Bringing creativity and fresh ideas to cocktail development and seasonal menu changes.
• Maintaining high standards across cocktails, wine, spirits and overall beverage service.
• Managing stock, ordering, inventory, stocktakes, GP%, margins and wastage.
• Building strong supplier relationships and driving beverage sales through genuine product knowledge.
• Creating efficient systems and maintaining licensing, RSA, WHS and company compliance.
• Working closely with restaurant and kitchen leadership to deliver a seamless premium guest experience.

About You
You’re an experienced bar leader with strong all-round beverage knowledge and a genuine creative flair when it comes to cocktails.
You know how to make a great drink and understand flavour, balance, technique and presentation, but you can also think beyond an existing recipe. You enjoy coming up with new ideas, experimenting with ingredients and developing cocktails that are interesting and memorable while still fitting the venue and making sense commercially.
At the same time, you’re not purely a cocktail specialist. You’re confident across wine, spirits and broader beverage service and understand how all of those elements come together to create a premium guest experience.

You’ll ideally bring:

• Proven leadership experience within a premium bar, restaurant bar or similarly high-quality hospitality environment.
• Strong knowledge across cocktails, wine, spirits and broader beverage service.
• Strong cocktail knowledge and technical bartending skills, with the creativity to contribute new ideas and develop drinks.
• Experience contributing to or developing cocktail and beverage menus.
• A strong understanding of flavour profiles, balance, ingredients, technique and presentation.
• Confidence taking a cocktail from an initial idea through development, costing, training and execution.
• The ability to train and develop a knowledgeable bar team across cocktails, spirits, wine and service.
• Strong understanding of stock control, GP%, ordering, wastage and cost management.
• Confidence working with suppliers and managing beverage relationships.
• Experience operating within a fast-paced, high-volume environment.
• A hands-on leadership style and willingness to jump behind the bar alongside your team.
• Strong communication, mentoring and people leadership skills.
• The ability to balance creativity with consistency, commercial performance and premium service standards.
• A genuine passion for hospitality and creating memorable guest experiences.
