Key responsibilities will include:
- Own the consolidated hospitality P&L, including revenue, gross margin, labour, controllable costs and EBITDA across the portfolio.
- Lead annual budgeting and rolling forecasting in partnership with the Group CFO, ensuring venue leadership is accountable for performance.
- Drive revenue growth through pricing, yield, distribution, events, membership, covers, average spend and non-room revenue.
- Identify and deliver EBITDA improvement through labour productivity, cost control, procurement leverage and optimisation of underperforming revenue streams.
- Establish consistent group-wide reporting, trading reviews and performance disciplines.
- Build, assess and develop the senior leadership team, creating greater depth, accountability and succession capability.
- Design and implement the organisational structure and operating rhythm required to support a materially larger portfolio.
- Define and enforce group operating standards while retaining the individual character and identity of each asset.
- Champion exceptional product, service and guest experience while ensuring robust compliance across liquor, food safety, WHS, employment and licensing requirements.
- Lead major repositioning projects as an operational turnaround, separate from its redevelopment.
- Provide operational and commercial leadership into future development, acquisition and partnership opportunities.
- Lead pre-opening strategy, operating models, budgets, critical paths and leadership recruitment for new assets.
- Ensure future growth is accretive rather than dilutive, supported by the right systems, people, structures and commercial disciplines.
- Provide the Group Principal and CFO with a reliable, forward-looking view of performance, risks and opportunities.
- Represent the Group with key industry, government, media and community stakeholders.
We are seeking a proven hospitality executive with the commercial maturity and operational credibility to lead a significant and growing portfolio.
You will ideally bring:
- Multi-site hospitality leadership with full P&L responsibility across a portfolio generating approximately $75m–$150m+ in revenue.
- Genuine, hands-on food & beverage expertise spanning restaurants, bars and events.
- Strong hotel and accommodation experience, including rooms revenue management, pricing and distribution.
- Exceptional commercial and financial acumen, with a strong understanding of unit economics, labour modelling, contribution analysis, EBITDA and capital returns.
- A demonstrated history of delivering measurable revenue and EBITDA improvement, with the ability to clearly articulate how results were achieved.
- Experience contributing to new developments, acquisitions or pre-openings, ideally within resort, destination or complex hospitality environments.
- A strong track record of building, upgrading and holding leadership teams accountable.
- The ability to balance strategic thinking with a willingness to get close to the operation when required.

Low ego. High standards. Commercially sharp. Direct. Resilient.

STRONGLY PREFERRED
- Development and pre-opening experience, ideally including a resort or destination asset. Concept-to-opening exposure is more valuable here than any single operating credential.
- Luxury or premium positioning experience where brand integrity constrains commercial decisions.
- Regional or destination market experience.
- Exposure to membership, club or subscription revenue models.
