Precinct General Manager - Up to 140k + Super

Something seriously exciting is coming to Oxford Street - and it’s going to be unlike anything else currently operating in Sydney.
This brand-new hospitality precinct will bring two completely different concepts together under one roof: an ultra-premium 120-seat Japanese-Peruvian restaurant and a vibrant 150-capacity late-night basement bar.

The restaurant has genuine ambitions to achieve a chef’s hat, while downstairs will come alive with live jazz, DJs, neon lighting and a completely walk-in-led experience operating under a 4am licence.
It’s bold, creative and built to become a destination in its own right.
An exceptional Precinct General Manager is needed to bring it all together.

The Opportunity

This isn’t a role where you’ll step into someone else’s operation and simply maintain what already exists.
You’ll be there from the beginning, helping to build the teams, culture, systems and service standards across both venues. It’s an opportunity to put your own stamp on the precinct and play a major part in how it is experienced by both guests and employees.
Reporting directly to senior group leadership, you’ll take ownership of the operational and commercial performance of the precinct while mentoring two venue managers and developing a high-performing wider team.

You’ll be responsible for:

• Leading the pre-opening and successful launch of both venues
• Overseeing daily operations across the premium restaurant and late-night bar
• Building, mentoring and developing the venue management team
• Establishing polished, hatted-level service standards
• Creating a culture that is fun, energetic and highly accountable
• Driving revenue, profitability, labour performance and cost control
• Managing recruitment, onboarding, training and succession planning
• Overseeing rostering across a complex multi-outlet operation
• Confidently managing late-night trade under a 4am licence
• Ensuring compliance across liquor licensing, WHS, food safety and hospitality awards
• Working closely with the culinary, beverage and senior leadership teams
• Delivering exceptional yet completely different guest experiences across both concepts
• Holding managers accountable while genuinely teaching, mentoring and supporting them

About You

This role needs someone with presence. Someone who can command a room, build trust quickly and bring plenty of energy without compromising on structure, standards or accountability.
You’ll be commercially sharp, people-focused and genuinely excited by the challenge of building something from the ground up.

Most importantly:

• Senior leadership experience within premium, hatted-level restaurants is an absolute must
• You must understand the detail, polish and guest expectations required to deliver genuine hatted-level service
• Strong experience across high-volume or premium bar operations
• Multi-outlet, precinct or large-scale venue experience will be highly regarded
• Strong financial acumen across P&L, labour, COGS, budgeting and profitability
• A thorough understanding of late-night operations, liquor licensing and venue compliance
• Experience building and developing large, diverse hospitality teams
• Confidence holding people accountable and managing difficult conversations
• A genuine passion for teaching and mentoring managers
• A hands-on and resilient approach within fast-paced environments
• Plenty of personality, maturity and a genuine sense of fun
• A current NSW RSA
