Job Title: Divider Operator

Pay and Hours for Job + Benefits: Up to $18/hr, Mon-Fri Occasionally weekends, 4PM-4AM 

 

Position Summary: Set up and operate the bread divider by maintaining proper speeds, and accurate weights of dough pieces. Produce properly conditioned dough pieces by rounding, dusting, and monitoring of the conveyor speeds to deliver dough pieces to the moulder sufficiently. 

 

Key Responsibilities:  

  • Comply with company-established policies and procedures, including but not limited to those  related to GMP’s, housekeeping, food safety, and quality.  

  • Check the weight of the scaled dough pieces so that corresponding divider adjustments can be  made continuously. In addition, you should know how to perform checks and complete check  sheets properly and legibly.  

  •  Correctly adjust the speed of the machine to insure the correct production rate.  

  • Fill and monitor dusting flour sifters; dusting flour should ideally be kept to a minimum on the transfer conveyors, as excessive dusting may affect the physical appearance of the finished product by causing streaked loaves and interfering with proper sealing of the dough loafs moulding process.  

  • Upon exiting the rounder, the dough piece travels on conveyors leading to the moulder. Proper adjustments must be made to prevent the dough pieces from sticking to each other. The first belt should be running just fast enough to allow a one inch gap between each dough piece. The second belt should run a little faster so that when dough pieces  drop on to the next conveyor it pulls a 4 inch gap between the dough pieces. This will allow the flapper to work properly and equally  distribute the dough pieces to the moulder.  

  • When finishing a product, the divider hopper must be scraped down along with the transfer belt under the division box to prevent cross contamination. Also keep scraper clean at all times. Scraper must be kept in the proper holder at all times when not in use.  

  • When the entire product is in proof box, you have to program the proof box for the next variety of pans.  

  • Maintain work area in a clean and organized manner.  

  • Conduct activities only after training has been provided.  

  • Performs other duties as requested by Supervisor or Manager.
